Hi-Protein Matcha Overnight Oats with Zespri® Kiwifruit

This low sugar, hi-protein overnight oats is a great energizer for a quick weekday breakfast to power you through your morning meetings. The matcha oats bring out the delicious sweetness of these Zespri SunGold Kiwifruit for a nutritious start to the day.

INGREDIENTS

  • 1 cup of Soy Milk, unsweetened
  • ½ cup of Rolled Oats
  • 2 teaspoons of Matcha Powder
  • 1 teaspoon of Flax Seeds

TOPPINGS

  • 2 Zespri SunGold Kiwifruit, sliced
  • Blueberries

Zesty Green Salad with Zespri Kiwifruit

Directions

  1. In a microwave-safe bowl, microwave soy milk for 45 seconds.

  2. Pour in rolled oats, matcha powder and flax seeds into soy milk. Stir to mix well. Once mixture has cooled, refrigerate overnight or for at least 4 hours.

  3. Before serving, top it with Zespri SunGold Kiwifruit and Blueberries.
