Zespri® Green and SunGold Kiwifruit Mooncake

Ingredients for mooncake filling

  • 250g icing sugar
  • 1 Zespri® Green Kiwifruit
  • 1 Zespri® SunGold Kiwifruit
  • 100g liquid glucose

Ingredients for mooncake paste

  • 5g glutinous rice flour
  • 100g wheat starch
  • 150g water
  • 50g salad oil

Zespri Green and SunGold Kiwifruit Mooncake

Directions

  1. Dice kiwifruit and stir with liquid glucose; and refrigerate, to use later.

  2. Sieve mix of glutinous rice flour and wheat starch, stir in water; knead into a paste. Wrap the paste in cling film and let it stand for 15 minutes.

  3. Prepare the mould and smear it with flavourless salad oil.

  4. Press paste into mould to cover the bottom and sides, put kiwifruit filling in middle and add final layer of paste for the top. Press into the mould.

  5. Remove the mooncake out of the mould and refrigerate for 10 minutes before you eat them.
